Junin Bush Bean Seed

Dry bean variety. Plants produce an abundance of pods containing scintillating pink seeds when freshly dried. Would coordinate very well with beets! Very beautiful seeds, almost too glamorous to cook with. These beans apparently come from an Andean gene pool, from an area around Junin, Peru. Seeds, sadly, darken to prosaic burgundy in storage. They need to be freshly dried to truly enjoy the eye pop of pink.
