Corlis Bolton Haynes Jerusalem Artichoke Tubers

An early variety of Jerusalem artichoke, with incredible yields.  Plants grow to about 6 feet and are covered in yellow flowers.  The flavor is similar to a gently toasted sunflower seed, but with the texture of a very soft and creamy baby potato.   Cooks up very quickly and can be sauteed, boiled or pan fried to develop a crispy brown exterior.  Really delicious flavor.  A perfect early variety for the North.  This variety can grow truly enormous sunchokes.  5 tubers per order.
