One of my favorite new peas, Ruby Beauty definitely inches closer to the dream of a truly red snow pea! These peas are really striking when young because the stem caps are limey yellow, the flowers fade to navy blue and the little pea out of the bottom is true red. Quite the combo! As they age they darken and lose that intense red coloration, but it’s a show while it lasts. The fully mature snow peas turn a purple color and are very good. Rare! 2024 seed.
