Soybean Seeds
A legume which is very high in protein, and quite easy to grow. Lots of diversity in this species, from large seeds to tiny, and an assortment of earthy colors. Most varieties can be eaten young as edamame or dried and used that way in various soybean preparations. This is another very calorically dense food, and therefore a great self relaince food. Yields are directly related to maturity times in soybean plants – earlier varieties yield less but reliably mature in time, whereas late maturing varieties have much higher yields but sometimes need to be dried under cover. Transplants work great with soybeans!
