I wasn't sure what to expect with this new-to-me amaranth, and it was a stunner. The big, burgundy heads positively stole the show, particularly in late summer as they bulked up in girth and size. Really eye catching plants, and the foliage is also tinged with hot pink. Everyone asked about these 'flowers'! Fertility probably affects this plant, so amend the soil well for the nicest, largest heads. I believe this particular variety originates in Italy and goes by the name 'Testa di Elefante'. When young the leaves can be eaten like spinach, and the seeds can also be eaten.
